2 tablespoons vegetable oil

add hot sauce to taste

lime wedges as needed

mix corn, jalapeno, bell pepper, and garlic in a bowl.  coat the blend evenly with vegetable oil and spread

chopped cilantro as needed

it out on a sheet tray.  place in a 400F oven until the corn blend is good color.  set aside.

cook until the cheese is fully melted and combined with the milk, stirring occasionally

RECIPE:     mexican street corn

1/2 cup of milk

remove from heat and serve

for service top with queso fresco, chopped cilantro, and a lime wedge.

aDD cheese sauce base and milk to a double boiler.

add hot sauce to taste

crumbled queso fresco as needed
